Explanation
Emulsification is the process of mixing two or more immiscible liquids to form a semi-stable mixture. Soap molecules are generally long-chain compounds with polar groups; for example, soap (fatty salts of sodium and potassium). A soap molecule has two parts-(i) a long hydrocarbon chain ($C_{17}H_{35}$) which is soluble in fat, and (ii) a water-soluble polar part ($-COO^- Na^+$ group). During emulsification, the non-polar alkyl part ($C_{17}H_{35}$) dissolves oil or grease, while the polar part ($-COO^- Na^+$) dissolves in water. When rubbed properly, grease becomes suspended in water as tiny droplets and is easily washed away with running water.
