Final product of fermentation
Explanation
The slow conversion of complex organic substances into simpler substances in the presence of enzymes is called fermentation. Grape juice and other fruit juices are used in fermentation in the presence of yeast (which contains suitable enzymes) to produce alcoholic beverages. Both have the formula C₆H₁₂O₆. $$ C_{12}H_{22}O_{11} + H_2O \xrightarrow{invertase} C_6H_{12}O_6 + C_6H_{12}O_6 $$ Sugar Glucose Fructose Both glucose and fructose, in the presence of another enzyme, zymase, are converted into ethyl alcohol (ethanol) and carbon dioxide. Both enzymes—invertase and zymase—are present in yeast.
